More than 90 distinct kinds of banana have been catalogued by the USDA Tropical Agriculture Research Station. locally in Puerto Rico, banana needs a modifier, because it doesn't just refer to the Cavendish variety well known in the US. But because mostly we eat only that variety, the USDA is looking for more resilient types. in Puerto Rico, robust crops of different varieties are sold by small farmers, used in the cuisine, and turned into vegan muffins and compost. Though 85% of Puerto Rico's food is imported, a culture of agriculture and farming wisdom remains, represented in the bounty of bananas and the generosity contained in each bunch.
