Aaron Kahn, who operates Wurstbar in Jersey City, N.J., was facing a bad situation when an employee at his restaurant was diagnosed with Covid-19. Kahn knew he needed to close his restaurant and allow his small staff to quarantine, but the upcoming weekend was supposed to be beautiful weather, promising a lot of business that would help sustain Wurstbar through a difficult winter. Friend and neighbor André Fersa, who runs a barbershop nearby, offered to run the restaurant over the busy weekend. They created a simplified menu and, with the help of another friend, Fersa ran the restaurant. He said, “I think we need to be more like this. Like, figure out ways of helping each other out, thinking outside the box and not letting our neighbor go down.”
