An architect from New York moved to Jackson, Wy., and wanted to address the issue of sustainable sources of local food. But at 6,000 feet, Jackson has hardly the right weather for fresh produce. So this determined entrepreneur found a solution in the only direction available: up. Her vertical farm is on one-tenth of an acre and is a steady supplier of lettuce, tomatoes and other veggies to local restaurants and grocery stores.
